Sweet Pea Hummus

Light, green and full of protein, sweet pea hummus can enhance a variety of light dishes. It can be served as a vegetable dip. It is amazing as a sandwich spread, especially with some radish or cucumber slices on top. It is sublime with roasted asparagus and quite spectacular on crackers. This hummus can be kept in the refrigerator for a few days in a Tupperware container.

Sweet Pea Hummus

Serves 4

2 cups cooked or canned garbanzo beans

1 1/2 cups green peas, lightly steamed 

3 tbsp  raw tahini paste

3 tbsp lemon juice

1/2 tsp sea salt 

1 clove garlic

2 tbsp lemon zest

Water if needed, for blending

Blend all ingredients until smooth, using some water to assist in blending as needed. Taste, adjust seasonings and serve, topped with lemon zest!
