All About Pours

Blessed be the pour. A carefully calibrated pour lies at the heart of a memorable wine tasting.

What’s in a pour?

You’ll notice that the quality and variety of wines available by the glass in most restaurants has improved. As people become more wine savvy, expectations have increased. This change is made possible partly by tweaking the amount of a standard pour.

Some choose to give value by using a 6 oz pour. As employees tend to slightly overpour, this amounts to roughly 3.5 glasses per bottle. You get a larger pour, but the quality may not be up to your expectations.

Many are moving to a 5 oz pour as a way to serve higher quality and hence, more expensive wines. At 5 or actually 4.5 pours per bottle, a restaurant can serve a wine by the glass that would normally only be sold by the bottle.

There is one other pour only officially recognized in closed circles. The “Club Pour” is an 8-10 oz pour subsidized by hefty club dues. This extravagance exists only in certain places. Here are some clues to let you know if you’re entitled to a “Club Pour.”

1.     Are you at the club?

2.     Well, Number One pretty much covers it.

Drink well, Curt
