Peaches and Goat Cheese Salad

Juicy and sunny summer in one flavorful bite?  The tart yet sweet peaches, combined with the creamy, salty goat cheese, present a happy mix to enjoy during the lazy summer lunch.  This salad has a full, bright, crispy flavor of the fruit and the herbs mixed together.


  2 cups Arugula Leaves

  2 sprigs Chives or Green Onions

  2 teaspoons Fresh Lemon Thyme

  1/2 Avocado sliced

  1 medium Cucumber sliced

  2 medium Fresh Peaches sliced

  1/2 cup Soft Goat Cheese crumbled

  1 teaspoon Fresh Lemon Juice

  3 tablespoons Extra Virgin Olive Oil

  To taste: Sea Salt, Black Pepper


Arrange the first seven ingredients in a large plate in layers. Combine lemon juice and olive oil and pour over the salad. Sprinkle with salt and pepper and serve.
