Christmas Wreath Salad


2 cups Baby Kale

3 sprigs Green Onions diced

1 medium Cucumber sliced in strips

3 tablespoons Fresh Rosemary Leaves, stalks discarded

1/2 medium Avocado sliced into small cubes

1/2 cup Fresh Pomegranate seeds

1/4 cup Dried Cranberries

1 teaspoon Fresh Lemon Juice

3 tablespoons Extra Virgin Olive Oil

1/2 teaspoon Sea Salt



1. Arrange the first seven ingredients in layers on a large plate, keeping a bagel-like design ( salad goes around the plate’s edge and there is a hole in the middle.)

2. In a cup, combine the olive oil, the lemon juice and the salt. Mix well.

3. Pour the dressing over the salad and serve.
